So, here's the thing.

When you call your organisation 'Gallowsbait' it doesn't exactly make one feel the most comfortable working with your... Operatives? And whilst Eames knows and respects their reputation, he doesn't have to feel great about it. Nor does it help that the one they've brought on-board is a strange sort. Quiet, restrained, but not like they're natural qualities. Not quite calm, but nothing approaching agitated either. It all feels less like a personality and more like an act-- no, a mask, and maybe it's paranoia but paranoia keeps you alive when you harness it right.

(Of course, part of him is also aware how differently they operate, maybe he's just a little sensitive. The Gallowsbait built their reputation on completing a job at all costs, and Eames is not that man. He will and has bailed on jobs where the risk was far too high to be offset by the potential reward. It's not something he's ashamed of, but it does feel strange to work alongside someone whose ethos is the exact opposite.)

The team is working out of an apartment while they get set up, it'll be a dangerous job, and Eames is here going over some of the research to make doubly sure he knows exactly what to do. Just him and their mercenary friend. Eames doesn't know what he's doing here so late, but when he gets up for a coffee break he courteously decides to bring one to them too.

The reason that the Gallowsbait are known to finish all their jobs is partly because they are very picky when choosing a job and partly because they're never all in the same place at any given time. Should something go awry, should the payment not come through, or the employer turn on them, any remaining Gallowsbait will (eventually) track them down and finish the job.

In any event, Greyjay is good at what he does. He's quick, clever, and since they're in an actual apartment, he's happy to both cook and clean up. Isn't that grand? Snacks for all.
